I am counting my days in office ......it’s not the thought which you came to your mind instantly rather I am counting my days before I am off for vacation for about a week with my lil one and my mom....been looking forward from long time. Away from the mechanical life....looking forward for lot of talk with my sweet "amma" and of course my naughty son who is growing up.....and not to forgot to mention here has started speaking which includes emotional blackmailing...and refuses to give me that cuddles, hugs now I have to literally beg him for one...and that’s when I feel jealous with all those moms who are blessed with baby girls.

Moving on to today's recipe it’s a simple breakfast idea with Bread.

Bread Upma-Simple Breakfast Idea

Preparation Time: 10min
Cooking Time: 15min
Serves: 2
Serving Tips: As is
Shelf Life: One day

Ingredients

1 pound bread cut into 1”inch along with the crust
2 medium tomatoes chopped
1 medium onion chopped
2 green chillies slit
2 tbsp. Coriander leaves chopped
1 tsp. Sugar
Salt per taste
1/ 2tsp turmeric powder
1 /2 cup water

For the Tampering

1.5tbsp. oil
3 tbsp. peanuts/groundnuts
2 red chillies broken
1 tsp. mustard seeds
1 tsp. urad dal
1tsp. chana dal
1 strand curry leaves

Method

Cut the bread slices into half inch pieces along with crust (you can remove if you don’t like it) I use it because it avoids the Upma becoming mashed up. Keep it aside.

Chop the tomatoes and onions and keep it separately.

Take a pan and all the ingredients labelled under “To Tamper except for curry leaves. Once the mustard starts spluttering add the curries leaves and give it a quick stir and then add the onion and fry till translucent. Then add the tomatoes, half cup water, salt, turmeric powder, green chillies and sugar and mix well. Let it cook till tomatoes are done.

Finally add the bread pieces and sprinkle little water so that entire things come together. Mix well and keep stirring till bread pieces become hot.

Finally garnish with coriander leaves. Serve hot.
