Its freezing here in Bangalore. I feel so lazy to get up early in the morining to prepare the daily routines. water is cold, you dont feel any sense in your hand.
I prepared this soup over the weekend and it came out really well.
Hot Sour Soup
Preparation Time: 10 min
Cooking time: 20 min
1.5 cup each of nicely chopped veggies
(Capsicum, corn, baby corn, French beans, carrot, tomato,)
1 loosely packed noodles boiled
1.5 tsp dark soy sauce
2 tbsp tomato ketchup
1 tsp ginger julienne
1 green chilli chopped
2 garlic cloves chopped
2 tsp lime juice
Salt to taste
1 tbsp corn flour
1 tsp pepper powder
2 tbsp butter
Boil the noodles according to the packet instructions, run under cold water and add little, oil mix well and keep it aside. Chop all the veggies and keep it aside. Take saucepan heat the butter add in the chopped garlic. Just when it changes the colour add in all the veggies, green chillies, giber saute a bit till the butter coats evenly.
Add enough water and cook the veggies with salt. Let it boil till the veggies are done (I usually prefer veggies in soup to be little crunchy). Next add in the soy sauce, noodles, pepper powder, tomato ketchup and mix well. Let it simmer low heat.
Now finally add the corn flour mixed in 2 4 tbsp of water. Mix well and boil for another 5 minutes. Last when you the soup add the lime juice. Serve hot and enjoy
