Spicy Mushroom Pulav / Pilaf


I have few vegetables in my list which I dont fail to bring everytime I go to shop for vegetables. I do not get bored cooking with it and everytime I see it I fall in loe with it all over again ... All these while I didnt give my lilttle one mushroom but last time I found really nice looking packed mushroom in SPAR. 

So tried this Pilaf which came out very well and my lil one loved thr rubbery texture of mushroom.


Mushroom Pulav: Mushroom Cooked with Rice & Indian Spices

Serves: 3

Served with:  Raitha / As is


1.5 cups packed Mushrooms (cut lengthwise)
1/ 2 cup each of (cut French beans, carrots) (cut bite size)
1 medium onion sliced lengthwise
1/4 fresh/ frozen/dry peas
2 cups rice Basmati /Regular
2 tsp oil / Ghee
Salt per taste
4 cups vegetable stock
1 tsp shai jeera

For the Masala

Handful of chopped coriander leaves
2-3 green chillies
5-6 cloves of garlic
1” ginger washed and peeled
1” cinnamon stick
2 cloves
1 star anise
4 Pepper corn


Wash and soak the rice for about half hour, meanwhile grind together coriander leaves, ginger and garlic without adding water to fine paste and keep aside. In a pan add together the rest of the spices and dry roast till the aroma spread across. Dry grind it into a fine powder and keep it aside.

Take a pressure pan / cooker heat the ghee/oil to it add the onion slices and fry till they are brown, then add the coriander, GG paste and fry till the raw smell goes off or till the oil leaves from the sides. Add in the Rice and fry till you get nice aroma.  

Add in the vegetables and fry for another minute or two till everything comes together. Add vegetable stock, salt and the powdered masala. Mix everything together and pressure cook till two whistles.

Serve Hot with your favourite raitha.
