Grilled Carrot & Tomato Soup


What is wrong with the weather..usually during the dussera rain is always expected and it will be poring..but this time there was not even a single drop. After two days of the festival there was rain and it continues till date including Banaglore. I am just wondering are we back to Monsoon or Summer or Winter....

I love winter especially Bangalore, though every year the coldness of winter isnt dropping instead it is more like summer but there is something about the winter. Especially food front there is lot of soups, and warm foods. My today's recipe is a soup and it is my first soup recipe here..

Grilled Carrot & Tomato Soup

Preparation Time: 10 min
Cooking Time: 20 min
Serves: 2
Difficulty Level: Easy


3 medium carrots
2 medium tomatoes
1 tsp red chilli flakes
1-2 basil leaves
1 tsp pizza seasoning
2 cloves of chopped garlic
1 /2 cup milk
1 / 2 cup cream (low fat)
Salt per taste
1 tsp pepper powder
2 tsp oil


Pre heat the oven at 180 degree c. Grill the Tomato and carrot for 20 min just when the veggies wilt a bit. Let the vegetables cool down completely. Peel the skins of tomatoes and grind the veggies and grind into a smooth paste.

Take a pan heat the oil and add garlic, basil leaves and give it a fry till everything comes together. Add the puree to it and then add the cream, seasoning, salt , pepper powder and chilli flakes and bring it into a boil. Then add the milk and let it boil again in low heat.

Serve hot with papad
