Being a vegetarian have you ever felt that when you go for a grocery/veggie shopping there arent any variety in the market? I have felt it so many times and always came back with that frowing face, irritated expression.
Other than the above my constant worry is that "what to prepare for the breakfast". My lil one given him a choice will eat only "Dosas" whole day and particulaurly "Neeru Dosa" (the recipe will follow soon). So for a different i made dosa out of the cucumber ( which is used for the regular salads). Though the dosa has a strong smell of the cucumber it is an instant preparation with no dals, no fermenting
Cucumber / MulluSouthe / Kakadi Dosa
(ucumber, Coconut & Rice dosa)
Preparation Time: 10 min (except the rice soaking)
Cooking Time:20 min
Makes: 10 dosa
Serve with: Coconut jaggery mix/ghee/chutney
1 medium cucucmber chopped/cubed
1/2 cup grated coconut
salt per taste
1.5 cup rice
3 tbsp jaggery
1/2 methi/ fenugreek seeds
1/2 cup sour yoghurt/curd/buttermilk
ghee to roast
Soak the rice overnight. peel the cucumber cut into chunks. Take rice, cucumber, coconut, jaggery, salt, methi seeds & buttermilk/ curd in a blender and grind it into a smooth paste.
make the batter into medium thicker consistency.
Heat the iron griddle and make dosas. Roast it with ghee.
Serve hot with ghee & coconut jaggery mix
Coconut & Jaggery Mix
Preparation Time: 5 min
1 cup grated coconut
1/2 cup grated jaggery
1/4 tsp cardamom powder
Mix the coconut and jaggery together and let it sit for about 15 minutes. Add the cardamom powder.
Serve with the hot dosa and ghee
