Beet Fudge / Halwa


I am very implusive when it comes to sweets only...otherwise I always loves to plan things beforehand, organise it and then execute it. So my hubby always laughs at me when it comes to sweet. yesterday suddenly I has such a bad craving for sweets and there was nothin a home which could satidfy my craving..

So I found these tender and crispy beets sitting in fridge waiting for me to use it. So I prepared Beet Fudge..I always love it colour texture. My lil one loves this veggie a lot so we make it a point to have it in our pantry. This veggie is highin iron.

Beet Fudge / Halwa
(grated beets cooked with milk and mixed with sugar & nuts)

Preparation Time: 15 min
Cooking Time :30 min
Serves: 4
Served with : your choice of icecream / as is


 2 cups peeled grated beets
2.5 cups sugar
1/2 cup ghee
2 cups milk
1/4 cup of cus mixed dry fruits
2 tsp cardamom powder


wash, peel and grate the beets and keep it aside. Take a pressure cooker and add 2 tsp ghee and let it become hot then add the dry fruits and fry till golden brown. In the same pan add 1 tsp ghee and add the grated beets and fry it till that extra water from the beet evoparates

Now add 2 cups of milk and mix well and cover the lid and let it cook for 15 min in a medium heat. The beet should cook properly. Once it is cooked add the sugar and mix well. then keep strring to avoid it sticking to the pan.

Just when the entire mixture begins to thicken add the ghee, cardamom powder and the fried dry fruits and keep strring. Just when the ghee starts to leave the side and fudge becomes a single mass and also if it drops from the laddle easily, the halwa is ready.
Serve it hot with your favourite ice cream.
